Problems with cake lace

Can anyone give me some pointers as to what I am doing wrong. I have followed the instructions to the letter, but my cake lace is really brittle and shatters when I try to remove it from the mould. This product is not cheap and I am wasting so much trying to get it right. Any advice gratefully received. Thanks all.

This happened to me when I overbaked it. Let it sit outside for half a day or so and it regains it’s malleability from the humidity in the air… Or you could steam it lightly! If you’re using the metallic premixes I do find them a bit more fragile, but a second coat of the white is supposed to help x let me know if you need any more help xx

Hi there :) I like to think I’m kind of an expert with lace mediums. I have experimented with them ALL & my two favorite’s are Cake Lace & Sugar Dress which are the same product. For me I hate to “bake” lace – I prefer this method… Follow directions to mix the product and such but here’s where I think it makes a difference; apply a thin coat & wait an hour and then apply another thin coat & leave to sit overnight!!! It’s very important to do two thin coats an hour apart & making it the day before so it can dry naturally overnight makes a big difference IMHO ;-) It will come off of the mold like butter!! I agree with Michelle. I use to bake mine, but now I do the same as she’s suggested. Less chance of drying out. And it really, really depends on your climate. Where I am its summer, so I would dry in the coolest darkest spot I could find. Humidity really affects the lace. In winter I add a smidgen of glycerin to the mix, guards against drying out and gives elasticity to the lace. Also you could try the smallest amount of steam, or a very, very slightly damp paper towel placed on top of your mold for just a few seconds, then try releasing.

I have some I made months ago and it still seems good… The white is much more pliable, I spray it different colours instead of the pearlised ones sometimes… But I do have pearlised ones too. air drying overnight as others have said may also prevent overbaking… Or i guess even putting it in a box with a slice of bread until it absorbs a lil of the moisture… Water is the key xx

Thanks everyone, I think I definitely must be overbaking it. I did try leaving my last batch out for a while, but went the other way and was very flimsy! I am going to try out all the different suggestions and see if I can crack the pesky stuff. I am using some of the more detailed, delicate moulds and maybe will have better results trying out one of the more substantial ones first.
I really do appreciate the time you have taken to help me out, lots to work on here.

Linda I always kept it dry over night I have also heard that if baked it dries to quickly and can break easily. You will find it will come out of the mould so much easier xxx

Hi Roo!! I def think your oven is to hot or maybe you are leaving it in too long.
This happened to me first couple of times with cake lace, everyones oven is different so their timings may not be right for your oven. I played around turning the oven down a little and then kept looking every 3 to 4mins so I could keep checking it and get the perfect time for it to be ready. I have never had a problem since. I know its a pain to check it every couple of minutes, but once you’ve done this you can find the perfect time for your oven and you know how long to leave it for next time!! I hope this helps a little and let us know how you get on!! :-) x
