Am currently in the process of making sugar roses and daisies for a flower cascade for a naked (3 tier) wedding cake. Just had a moment of panic regarding attatching them to the cake! Normally I would use flower pics and/or royal icing. However, will the sponges support the picks? Would royal stick to plain sponge? Anyone had any experience???

I don’t have any experience with naked cakes, I had one on order once but, the bride changed it because her mother didn’t approve. Go figure…. Anyways, if I was concerned about the picks holding in the sponge, I would add some white melted chocolate behind the flower as well and hold until set. Good Luck!

I used melted white chocolate to attach these buttercream flowers to the buttercream frosting. I also used the melted white chocolate to attach all the beads and draggees to the flowers. I don’t seem to have any luck with sugar glue and it takes too long to dry. I made the flowers two days ahead and let them air dry….just in case there are some new decorators out there that didn’t know this. I got the inspiration for this cake from Melissa at mycakeschool.com. I really like her site. (is it ok to say that on here??)

With all my years of decorating at our bakery (35 years), I’ve been sticking pretty much to the ‘catalog’ designs such as Bakery Crafts and DecoPac. Pretty much all the same techniques in mass production. Now that my daughter and an assistant have taken over that side of the business, I’m concentrating on the wedding or tiered cakes only. When brides started bringing me in photos of cakes with designs I wasn’t familiar with, I turned to the internet and purchased a lot of tutorials and did a lot of practicing and bought a lot of new gadgets!
