I made this for a topping of a 5 layer wedding cake. Everything is sorted except my nerves. The reason is that the bottom layer must have ruffled roses around it. I have been looking at tutorials and some videos and tried to make it, but I am still struggling to get the perfect ruffled rose effect.
The cake is due on Friday. If anyone could send me an easy way to do them, it will be greatly appreciated.

Hi Maggie, I saw a really good tutorial where you cut strips of paste (or run through a pasta maker and cut strips) then cut along about 1cm in from on edge like you do when you line a cake tin sides. Then wind the strips like a wheel with the snipped edge to the inside of the wheel …if you understand what I mean. You can pleat and pinch as you go along if you want to. Then roll another and so on then fill in all the gaps with strips done in the same way. Not sure if this helps but good luck I know it will look stunning xx

As I understand them Maggie they’re quite time consuming but not overly difficult. I know some people pin them into position with cocktail sticks as they go along them remove the pins once dry. I hope someone can reassure you and offer some good advice, looking at your flowers I’m sure the ruffles will be a breeze by comparison!

I just saw a tutorial on mycakeschool. You make your middle rossetes ahead of time and let them dry. Then pipe with a rose tip all the circles. Keeping as even as possible. When finished you attach the pre-made rossetes and attach in the middle of your circles/ruffles with icing. Don’t know if my explanation makes sense. The video on mycakeschool , even Melissa, who owns the site and teaches, said doing this ruffle is a “challenge”. But as you say, practice makes perfect!! I will take a overturned metal bowl and practice my piping…scrape off…do again…and again…. :o)

There is also a video tutorial on Paul Bradford’s site – they are usually brilliant but you have to pay. You can get a monthly subscription for 9.95 – depends how desperate you are! You cake topper looks really beautiful by the way! Good luck x

Thank you Judy and June ! Yes Judy I’ve seen them and some more. Maybe I am nervous because people like Melissa from mycakeschool said it is a challenge. But I am in at the deep end and swim is all I can do lol.
