Hi Maggie, I saw a really good tutorial where you cut strips of paste (or run through a pasta maker and cut strips) then cut along about 1cm in from on edge like you do when you line a cake tin sides. Then wind the strips like a wheel with the snipped edge to the inside of the wheel …if you understand what I mean. You can pleat and pinch as you go along if you want to. Then roll another and so on then fill in all the gaps with strips done in the same way. Not sure if this helps but good luck I know it will look stunning xx
