Hello! – Hope everyone is okay :)
I need some help on something, because I really have no idea at the moment…
This week I have been extending my range of cakes, flavours, filling etc… but I then suddenly realized that I’m not currently catering for those who have special dietary requirements, such as, Vegan, Gluten & Dairy Free…. So, I started searching and found some great recipes that I need to try out pretty soon, but, then I thought to myself, what do you use as a filling in a Vegan cake, Gluten Free cake and a Dairy Free Cake?
Can you use fondant and Gum-paste on Vegan, Gluten & Dairy Free Cakes?
Also, if you know of any websites which have a good Vegan Chocolate Cake recipe it would be a big help. Thank you in advance for your responses, I really appreciate it!!

Hello Laura,
I have a no-egg, dairy-free cupcake recipe, that you can certainly make as a cake, that I’ve used many many times with kids and it’s always a GREAT success with kids and adults alike. I, personally, don’t really like it cos it reminds me of boxed cakes especially that the cake I make all the time so much yummier. But I will be more than happy to share it with you!!

Laura the only difference I make with my Gluten free recipes is to use the Dove Flour , it’s beautiful, I have a separate oven, tins and store cupboard to avoid cross contamination.The dairy free I use a Dairy free Pure Soya (like margarine) it’s great makes the cake very light. Regalice have now confirmed no gluten present and vegan friendly for their icings. I’m struggling to make a nice filling though, the soya margarine and icing sugar is blah! but I’m working on it, will keep you posted as I too find the change in diet for many people a choice rather than a necessity. xx

Check out the paleo diet pages. Tons of gluten dairy sugar, trans fat free cakes. Pls do not use soya! The worst ever for the health. Paleo uses coconut flour, coconut oil, nut based creams….etc. Also there are several flourless cakes as well online.

Ive recently had to be dairy free and have been told that the hard blocks of stork margerine (not the tub) are dairy free and to substitute this whenever you need butter. I haven’t tried it in buttercreams but is nice in cakes in case this helps.

I’m still working on gluten free cake recipies – it frustrates me that the texture is never quite the same as regular cake. When it comes to fondant, it depends on the brand you use or if you make it yourself. Satin Ice, for example, is gluten free, vegan etc.

Hi Laura, as a lacto vegetarian I got many recipes. The only thing I still need to find out is how to make eggless Royal Icing, for decorations, such as stringwork and flowers. There is als one thing you should consider, if you want to bake for a hindu vegetarian, some strict hindu wants ‘clean’ material (pans etc), like kosher for jewish people.
