Which fondant to use?

Hi all. First I would like to say, I love this forum and all the help I can get here.
Thank you guys.

I have a question, which fondant is best to use to cover cakes?

As a beginner I mostly use Wilton brand, I buy it at the local Michael’s, but it often gives me problems especially for bigger size cakes. It keeps ripping and tearing, right before I want to put it on or already on the cake.
Can I get any advice on what’s the best way to handle it and which brand is best to use?

Hi Galina,
I personally think that what is the best fondant to use is personal preference. I started using satin ice but now i have moved onto Fondx which I seem to have much better results.

I just bought some Pettince but have not had a chance to try it. I know some people swear by it and I have read a lot of people who love making their own marshmallow fondant.

For me how i get the best results is actually rolling my fondant between 2 sheets of greased vinyl. I use THE MAT from sweetwise.

I make Marshmallow fondant. It is very easy & inexpensive to make and you can flavor it in any way you like. The last couple of times I have actually made this one : http://www.youtube.com/watch?v=SJCUy3ezRxE&list=PLB938A0B345928EDB&index=16
It calls for a bit of Wilton fondant to be added. Doesn’t seem to effect the flavor of the marshmallow fondant and is easy to work with it. I found that I get better results using store brand marshmallows.

Hi, I also use the marshmallow fondant with much success, but if I don’t have any on hand, I use the Wilton fondant. I know many people don’t like it because it doesn’t have much flavor, but it is very good for covering cakes without tearing. If you are having trouble with tears, it may be that the fondant is drying out, or you are rolling it too thinly. Make sure you condition it properly and if you can get the Mat from SweetWise, it will make a great difference. I use it all the time and my fondant always comes out just right.

I use Satin Ice I cover roughly 12-18 cakes a week and it works the best. Do not roll too thin, don’t let it dry out. I don’t use cornstarch or powdered sugar I use a silicone pastry mat and crisco. I do have the mat system, but honestly I don’t like it.

Ditto funfetti! Since I’ve been using my Mat from SweetWise, i don’t have near the problems with tears that I used to. I mostly make my own MMF but have used Wilton as well. The Mat is super easy to use and well worth the small investment.

I’ve truly enjoyed working with Satin Ice fondant and gumpaste. It’s easy to work with and most of my friends and customers love it too! The taste is lightly vanilla-y. (they also have a buttercream flavored as well as dark chocolate).
Now I wish I got a commission from them for advertising! haha!

The Sugarpaste that i really love is Massa ticino Tropic from Carma ;)

I used so many Sugarpastes :Satin Ice, Marshmellow Fondant, other selfmade fondant, Regal ice, callebaut & others. But Massa Ticino Tropic smells and taste fantastic and its the best Handling. You have to try it’s great ;)…but expensive :/ …46€ for 7kg
