Buttercream finish on a cake when to cover

Hello my cakey friends, just a little question as I’m unsure what to do for the best I’ve been asked to make a 2 tier buttercream finished cake for collection Saturday morning about 12 do I decorate the cake the night before on the Friday so I’m not rushing in the morning will the sake be as fresh and ok until the Saturday night ? Or should I get up super early and make fresh that morning I only mean for applying the buttercream not for baking the cake

Anyone made one before what should I do ?

Helen, it really depends on what is inside the cake, if it is filled and covered with regular american buttercream (butter+sugar), I don’t see why not! I do it all the time.

As long as there’s no fresh fruit in your cake, I’ve decorated a buttercream cake 2 days before, and left in a cool area. No problem..

Thanks guys for the replies x inside the cake is just buttercream butter and icing sugar with a bit of skimmed milk which I what I use under all my cakes then add sugar paste x so if I covered the cake with buttercream the night before it will be fine for the Saturday I guess it’s like a big giant cupcake or cupcake and they last x thanks again Helen x

Hi Helen — I don’t see any problem in decorating it on Friday evening — I think it will stay perfectly fine till Saturday evening — as June mentioned in her comment you can keep it even upto 2 days without refrigeration — it doesn’t go bad because of the high sugar content!!

Can I suggest you substitute milk for cooled boiled water?… It still tastes lovely but you’re doing away with the dairy meaning it will stay fresh longer. I can’t remember who gave me that tip but works well for me!
