So I have read on here and other sites to put baking soda into purple fondant to keep it from turning blue. Tonight I tried to make my purple fondant with baking soda and it seems as if the fondant is breaking down. I use fondx fondant. I added 1.5 tsp to 2 lbs of fondant. After kneading all the baking soda in the fondant seems to have pock marks all over it. Even if I roll it out the fondant has the pocks. Has this happened to anyone else? Anyone have any idea why this happened?

You have to add a touch of pink to the purple :)
If anyone reads this I think I was able to salvage my fondant. So I had colored it using colored powder from crystal colors. I think when I added the baking soda it just dried my fondant out. I added a little violet americolor and I was able to get the moisture back into the fondant. Now let’s see if it turns blue :)

If that doesn’t work:
This has happened to me too – when I used Americolor. When I use Wilton, the fondant can be exposed to sunlight without the red disappearing. BUT: The purples available in my country from Wilton are kinda gray, so I blend in some extra pink, and voila! – a “durable” and deep purple.
PS: I don’t know if this is important or not, but I only use homemade MMF.

Thanks everyone for the replies. I was actually testing out the baking soda theory here. I was curious why the baking soda had caused the fondant to not be smooth anymore.
Ah….sorry Prima Cakes you had a tough time. Should have said in my post to use gel colours as baking soda can dry out the fondant. You don’t need much baking soda, 1 tsp per 1 pound of fondant….that’s a pretty small amount.

June that is okay it is not your fault. I had read about the baking soda in other places too. Now I know to use the gel. I actually used a little less then 1tsp per 1 pound.
Well this brings up the question if you use power to color your fondant do you need to worry about purple losing the red in it?
That’s a good question Jennifer. I’m guessing it shouldn’t make much difference. But honestly, I’ve never used powdered colours. Just gel.
