Start large or small?

Hie everyone, I am new to the cake business, is it okay to start baking a wedding cake or a birthday cake?

Birthday cakes are easier to make and there’s less pressure for a beginner than wedding cakes. Brides like to show off their cakes and they usually request elaborate cakes decorated with sugar flowers, ribbons, bling, quilting, etc. They are also much larger – we’re talking 14", 12", 10", 8", 6" – These large tiers are very heavy and you need to be well-versed in stacking cakes and transporting them.

Some people, though, love to make wedding cakes and they concentrate their efforts on perfecting this style. If you think you’d prefer dealing with brides and grooms, you can start out making smaller cakes and work your way up to those beautiful tall wedding cakes.

Hi Faith, both can be quite daunting but as its for your own business there is no better way to get the business kick started like a wedding cake. As the saying goes, word of mouth is the best form of advertising.

It would be a great way to get your name out there, and everyone at the wedding will see your work.

My first cake was a Wedding Cake, made for a colleague on a budget who was grateful for me not charging lots. Which meant she was also expecting less than if she was going to a seasoned professional. Having said that, I got through it, people were still impressed and it gave me the confidence to keep going. Looking back there are lots of things I would have done different, and I’ve improved so much since then. But thanks to her I’ve not looked back. I always think it’s best to start small, making birthday cakes gives you the chance to practise the smaller details which help build up much more impressive wedding cakes. I started small, and, I am so glad I did, you’ll be surprised at just how much you can learn from the little things.
Also, cake isn’t always about the design, the taste is just as important.

One word of advice, never agree to do a certain design if you have never done anything like it before, all cake decorators have their strengths and weaknesses, some are amazing at sculpting, some are amazing at piping, sometimes you just can’t do it all. Remember to practice bigger things before you agree to do them.
