How long would it stay fresh?
I initially was going to make the Avengers cake I recently posted a three tier, but decided not to due to birthday boy being sick and the party cancelled. So now I have this 6 inch crumb coated cake in the fridge with two layers of saran wrap on it. It was thawed and crumb coated on Friday (10/29). I have a family member’s birthday on Tuesday (11/1) that I had planned on making a small cake for. So I can use the 6 inch, but will it still be OK after being in the fridge? I typically only refrigerate before delivery, so I’ve not had a cake in the fridge this long.

Normally lasts cakes in the fridge, fresh, about 3 days at most, but loses flavor and texture.

Update…. Cake still tasted great! Wasn’t as moist as normal, but definitely hadn’t dried out yet. Was a good little experiment since it was just a 6 inch cake for family. It is the Glitz and Glam cake I posted.
Next time you can wrap well and freeze. I’ve crumb coated and froze up to a month. Lovely and moist after thawing and decorating. Long storage in the fridge dries cakes out. Freezing them makes them moist.

Yes, unfortunately I read on another site that the cake can become mush on the inside from freezing and thawing, and I wasn’t brave enough to try it. Lol. I need to give your tip a try!!! Thanks!!!

I have been baking for over 40 years. Trust me when I say freezing a cake DOES NOT make it mushy. I do it all the time. Look at my recent Thanksgiving cake posted about a month ago here. I froze the cake crumb coated for 2 days. Then I thawed cake slightly, covered cake in buttercream and it was frozen for another 3 weeks. Took it out day of for 6 pm serving. Was moist and lovely.
