I have been baking for over 40 years. Trust me when I say freezing a cake DOES NOT make it mushy. I do it all the time. Look at my recent Thanksgiving cake posted about a month ago here. I froze the cake crumb coated for 2 days. Then I thawed cake slightly, covered cake in buttercream and it was frozen for another 3 weeks. Took it out day of for 6 pm serving. Was moist and lovely.
