Hay and fence

I’m new to decorating cakes and would like to make a cake similar to the top tier of this cake, with buttercream hay and a fondant fence. Can anyone advise me on how the fence might be attached to the buttercream sides in a stable manner?

Make sure you have a crusting buttercream and I use piping gel to attach to the buttercream.

Wait till your bc has crusted and is firm. I’d make the fence from gumpaste, much stronger than plain fondant. Easily done by adding tylose/cmc powder to your fondant. Once your gumpaste fence is nicely dry and hard..you could use piping gel to attach, as stated above. But sometimes that can soften your gumpaste. I prefer melted chocolate. Spread on very thinly while warm, once you place the fence on the cake, chocolate hardens within seconds. That fence won’t budge.

Unless your customer has specified buttercream, I would cover the top with hay-coloured fondant and add some texture, and just pipe the top, then you can glue the fence easily. :D
