Advice about buttercream

Hi! I’m making my son’s wedding cake, which will be held in July and am looking for advice on which buttercream holds up better in warm, humid weather and if that buttercream can be used under fondant? Thank you!

Here is the recipe I use. It’s cooked flour frosting/icing. I’ve covered a cake with it and used in hot, humid weather, covered with fondant. I adapted by using 3/4 cup shortening & 1/4 cup butter, added 1 cup icing sugar and tblsp of meringue powder.

Don’t flavour your cake will be, but ganache would work to. Dries hard, and will hold up well in humid conditions.
