I made a cake for an auction that is vanilla bean cake with chocolate buttercream, covered in chocolate ganache & then fondant. The cake was baked Thurs night, decorated Fri & delivered on Sat. The lady who won it contacted me today (Sun) saying she would like to save it for next weekend. I’ve never stored a cake for that long, always make them fresh for events, so I’m really not sure what to suggest to her.
What would you all suggest?

Hi Kelly! I wouldn’t know how to store it for that long, will be interesting to see what other members think. I would think a vanilla cake may go a little dry after leaving it for that long? I would tell her it may go dry and say its best eaten in the first 2 or 3 days. Will wait and see if any members come up with a great idea!! Sorry I couldn’t help!! :-) x

Hi Elli. Thanks for your reply. I’ve read that fondant covered cakes can be frozen but I have yet to try it. I’d hate to suggest something to her & not have it go well. Hopefully someone else has some insight to share.

My understanding is technically speaking, a fondant covered cake can keep if stored in fridge for 7-10 days.
I agree with Elli, advise client the cake may dry out if kept that long in fridge and may not match the quality of enjoyment you intended, but should survive and be fine to eat. Advise her also to keep cake in box and place inside it a small bowl of bicarbonate soda. this will grab the humidity in the air of the fridge and support the fondant and decoration whilst kept in the fridge.
The cake could freeze but upon defrosting is likely to sweat to a degree that any decoration may be ruined so best to keep in fridge

I’ve read that fondant covered cakes can be frozen but then you have to be careful with condensation forming as they defrost. Maybe one day when I have some free time I will experiment with it to see how it turns out in the event that something like this happens again.

Hello I’am a hobby baker of Belgium, and have frozen many covered cakes, if you put it fresh into the freezer, you can not taste at all ! The longest time my daughter left the cake into the freezer was 3 months after the first communion of her little sun, I maked 7 cakes that day and their where 3 covered cakes over, a white, orange and dark blue covered cakes. We put them into a plastic closed box (her we use a lot of Tupperware boxes) When they came out of the freezer, you can not taste it at all, and I never have problems withe humidity. If there is a topper on it, that I will take of and put it also in a closed box, and that will dry and become harder. In the fridge I have the experience of 5 days that it keep fresh. That is my very honest experience that I can tell you! With friendly regards of Greet.

I once made a Barbie cake covered in fondant, which was left on the counter for several days. By the time it was cut, I noticed that it had started to develop mold inside. Living in Florida the weather is very humid so that may have been the problem. if the lady is not cutting the cake for a week – I highly recommend refrigerating it. She may want to cover it with Saran Wrap (cling wrap), put it inside a cake box well sealed in a really cold refrigerator. It should be OK.
