re: How long can a fondant covered cake be kept?

Hello I’am a hobby baker of Belgium, and have frozen many covered cakes, if you put it fresh into the freezer, you can not taste at all ! The longest time my daughter left the cake into the freezer was 3 months after the first communion of her little sun, I maked 7 cakes that day and their where 3 covered cakes over, a white, orange and dark blue covered cakes. We put them into a plastic closed box (her we use a lot of Tupperware boxes) When they came out of the freezer, you can not taste it at all, and I never have problems withe humidity. If there is a topper on it, that I will take of and put it also in a closed box, and that will dry and become harder. In the fridge I have the experience of 5 days that it keep fresh.
