Help Please!

I have been asked by a friend to make a 2 tiered birthday cake. She has requested dark chocolate cake covered in white fondant. I’m worried that a vanilla butter cream might not be enough to cover the darkness of cake, so am contemplating using a white ganche. My questions is this; do I dowel cake before ganaching and covering with fondant? Does the ganche harden to much to dowel once covered in fondant?
I have never attempted a ganache beneath fondant cake before, and not afraid to say it scares the pants off me!!!

Hi Sarah, you can easily insert your support dowels through the fondant and ganache when your base tier is covered. There are many tutorials on YouTube for stacking tiered cakes which will alleviate your fears!

Just a warning Sarah
White ganache is extremely sweet. I used a while ago, and wouldn’t again. I’ve covered lots of chocolate cakes with white bc and then white fondant…the dark chocolate never shows through. If your cake is firm, and cold…no worries putting in your dowels/cake straws. I’ve dowelled before adding my fondant and after…

Thanks Guys! Think I’ll go for the butter cream option, it’s mu usual method and besides, cheaper too ;0)
