Help please my lovely cakey friends…..I’ve been asked to make a Wedding cake with a waterslide all the way around it. I’m not worried about making the slide, but I’d like the water to look as realistic as possible. I know you can use gel for this, but as there will would be a lot of gel on the cake I worry that it might not taste good and that it will always stay sticky?? Has anyone got any experience of using this, and any advise please? I know I could use icing or buttercream coloured too, but the gel does look more realistic. Just not sure what to do for the best. Thanking you in advance because I know you will have lots to say on this xxxx

Why not try adding a colourless flavouring to the gel Karen?? I did once, a long time ago, and seems to me it worked? Guess you could mix up a little and see how it tastes????

Hi Karen, I don’t know too much about piping gel, I’ve literally just made my first batch about an hour ago, but I think you could use a combination of the two to get the effect you want. – Maybe you could use blue butter-cream with a thin layer of gel over the top, that way you wouldn’t have to use as much gel, but, as I said, I made my very first batch of piping gel an hour ago for a cake I’m making this week, but it seems to be working fine so far.
I’m not too sure Karen, you could always try it out on a cupcake first, see how it looks, and maybe you could use Royal Icing as the “Foam” for the waves too :)

That’s a very good idea Laura. B/C with just enough piping gel to give the shiny water effect….I like it….. :o)

Hi Karen,I have used the gel as well but found that it would run if it was warm .I have used piping gel and it seems to work better.I have also used fondant/ modelling chocolate mix and then covered it with a couple of coats of confectioners glaze.Hope this helps.Good Luck!

Thanks everyone, I’m going to try out all your ideas and see how it goes. I like the idea of adding flavouring to the gel, and thin layer over buttercream sounds a sensible idea too. xx Your all so helpful xx

Well it’s been a while since this conversation first started, but here is the cake I created using your help and fantastic comments. In the end I decided against the gel because I didn’t like the stickiness of it. So just used paste with some ice blue mixed slightly through into white. Hope you like it.
