Layla's Giant Cupcake

This is a giant cupcake cake I made for my daughter Layla’s 12th birthday past this weekend. She was having a cupcake-decorating party with her friends where I was teaching them how to make various cupcake designs with fondant and buttercream, so this cake seemed like a good choice. I initially had something a lot more elaborate in mind, but between party planning and having 4 kids home on summer vacation (and running on very little sleep), I had to simplify for the sake of my sanity. I think this would have been a much easier and less time consuming design if I had a giant cupcake mold, but I don’t, so I had to carve it by hand, which was trickier that I expected. For the design, since my daughter is a girly girl and loves all things cute and pretty, I decorated it with some shiny butterflies, pearls and a nice pink bow. In the end, she loved it and all her friends ooh-ed and aah-ed, so it was a success in my book.

Wow, this is so lovely, and quite amazing that you didn’t have the giant cupcake mold to make it! Yes, it must be difficult getting much done with 4 children home on school break, and planning a party as well! Love the idea of a cupcake decorating party! What fun!!
