Hi, i am wanting to try using ganache under my sugarpaste. I was just wondering how long does ganache last before it goes bad without being stored in the fridge. Just confused on the safety with it being made with cream.

As a chef I’d recommend looking at food safety and hygeine standards in your country. Usually items containing dairy in them can be kept for 3 to 5 days in the fridge, and a bit longer if you put it straight into the freezer well wrapped in a sealed container. To be safe it would be a good idea if you googled how long you could store products containing dairy and eggs for after baking.
Refrigeration dries cake out though so I would recommend freezing it if you wont be eating it immediately.
