Experimenting with Cookies.

So I start experimenting on cookies and I have one big problem.

So I start using the best cookie recipe that Ive got and put some freshly cut mango’s in. Small pieces but enough to make it runny (totally wet) even after a few hours in the fridge. So I decided to put some extra flour.. well no more cookies, now cake.

What can I do? I will try to make more different cookies with wet stuff.

What is the normal method to do if I add extra wet stuff in a recipe?

I would try adding freeze dried fruit instead of fresh mangoes. There’s powder or you can use a processor to make your own, this adds flavor without liquid. Some people like to add a bit of extract as well or natural flavor paste I haven’t had much luck personally with natural tasting fruit extract but I do love using fruit powder.

Yes, adding fresh fruit to a cookie batter changes the composition. As you discovered, too wet. Either use freeze dried or dehydrated fruit. I don’t know where you’re from. Here in Canada most grocery stores sell dehydrated fruit. Costco has the best selection and prices.
