Good morning all,
I need some help. I am in love with the trendy mirror glaze couture cake style. After deep research, I have discover that they are entremet cakes. I tried to find a pasty/ cookbook to purchase but they all seem to be in French. Does anyone know of one that may be in english or any online classes? Thank you all for your help😊

I confess I never heard of a entremet cake. Had to google it. You don’t have to make a mousse cake to get the effects. What I believe your looking for is a mirror glaze cake. Just google mirror glaze and many tutorials will pop up. But if mouse cake is what you’re seeking, Google just that.

Thank you June, I will google mousse filling ideas. I have used mirror glaze in the past and love it. I have ordered the Silikomart eclipse and the tortaflex mold for the entremet layer cake but I am confused as to many different mousse and cake layers to use. If that makes any since 😊

Well, Karen, you learn something new every day!! Firstly, I love Silikomart’s products. I won one of there lace mats and cake lace powder. It’s exceptional. I had to Google there tortaflex mold kit. Quite ingenious. My Mom use to do this, but used a cheesecake pan with removable bottom. I remember her putting a plate on the top that fit inside the pan. So when she flipped it over, obviously, the plate became the bottom.
Mom made a sponge cake for the cake. As for the mousse…can’t remember that, accept know it was made from scratch. I do remember it being light and airy.

Thanks June, wish me luck. I’m going to try and make one this coming weekend. I work full time in finance. I starred caking about 18 months ago as a hoppy. I had no idea that this would take off as much as it has for me. I stay booked up. I have been so busy that I have not even been able to post my work on here. I hope I will be able to soon. I just launch my business page on Facebook this week. I am now beginning to research opening a storefront.

Ahhh…another weekend cake warrior!!! Hats off to you. Looks like you found your calling!
I dabbled a little when I worked full time. I didn’t get that many orders, which was fine. Wanted to stay under the radar, just friends if friends and family. Because here in my area, if you sell cakes without being licensed, huge fine from health dept. And if you got sued..oh my. Especially if you didn’t have business/liability insurance. You should go into your profile here on CD and add your FB business page.
