Hello, bakers, with the holidays upon us, many of us will be busy and while most of us would prefer to make cakes from scratch, if you find yourself in a pinch because you’re missing ingredients – here’s a recipe I’ve used many times that uses a cake mix from a box – it’s delicious, moist and you will never tell it’s not from scratch – here it is – If you try it, please send me some feedback:
VANILLA SOUR CREAM CAKE
1 Box plain yellow cake mix; 1 cup sour cream (full fat); 1/3 cup vegetable oil; 1/4 cup water; 1/4 cup sugar; 4 large eggs; 1 tsp vanilla extract. Place cake mix, sour cream, oil, water, sugar, eggs and vanilla in large bowl; blend with electric mixer on low speed for 1 minute; stop and scrape bottom of bowl; mix for an additional 2 minutes at medium speed (do not overbeat). Batter should look thick and smooth. Pour into pans and bake at 350 degrees until toothpick comes out clean (time depends on your oven). Allow to cool and remove from pans. This should be enough batter for (2) 8" pans.
You can change the flavor of the cake by replacing the vanilla extract with coconut, rum, lemon, orange, etc. emulsion (which has a much stronger flavor than extracts). This has never failed me and it’s simply delicious! Enjoy.

I have also used a chocolate cake mix – it still works great!
