Alright so I have a friend who’s become a health nut and would like for me to make her a cake and asked if I could use coconut oil in the batter rather than vegetable. However I’m not sure if that will affect the structure or consistency of the cake. I know that it melts quickly but also becomes solid again when cooled… any thoughts?

I have used coconut oil in place of butter in a cake. The cake was denser than if you used butter. The cake also had a bit of a coconut flavor. I used a bit of lemon and orange extract. Everyone loved the cake. I substituted the same amount of coconut oil as butter. Just use a high quality coconut oil. Best of luck!
