Girls I need your opinion. Since I have only worked with fondant and gum paste I would like to use modeling chocolate for my figurines. I’m making a under sea cake with the octonauts characters on top and cupcakes also decorated with a shell on top.. Would the MC hold its chape like gumpaste?

I tried to use modelling choc for a topper a while ago… the added CMC didn’t seem to work, like it did in fondant/gumpaste. I understand that CMC hardens by drawing the moisture??? …which may be why it was less effective in the modelling choc.

I’m also not an expert with modelling choclate, but find it easier to use on larger modelling and sculpting pieces than smaller things. The one thing I do find with modelling choclate is it responds to heat, and if you have hot hands it softens quickly, so you need to work reasonably quickly. But what I do if it gets too soft is leave it to set a bit and work on something else and go back to it, as the beautify of it is you can still work with it I find. I like it as I find it more forgiving than gum paste etc which, once dry, that’s it and you can do no more. The modelling choclate does go hard once finished. I make my own and it sets quite hard. For more flexibility I also add a bit of fondant and/or marzipan … As I say, I’m not an expert and still experimenting so look forwards to reading what others have to say

Thank you Calli. I’ve heard MC allows the sculpting to add more details that gumpaste/fondant, and the taste is better.

I will follow this conversation too as I noticed the girls who make the best and most detailed figurines all share that they are working with chocolate. Thank you Cali for your post. Can you share how do you prepare your chocolate pls ?

Lilian, yes, I’ve dusted successfully with colour dusts. I’ve also airbrushed too.
