I am helping with my daughters baby shower, since I am the “baker” of the group, and so-so skilled at decorating cakes, I need some cake ideas, my daughter doesn’t like fondant or butter cream icing, so I figure I would be safe with cream cheese icing, but don’t even know how or find any thing that might work, anyone have any ideas/suggestions?
you could use white or dark chocolate ganache as a filling and coating… its very easy to make : )

Carrot cake and red velvet are lovely with cream cheese icing. This is the cream cheese frosting I use on my carrot cake – 1 tub of cream cheese (I use Philadelphia in UK), and about 2 cups icing sugar (I mix to taste and normally have a few tbsp left) and a tsp of lemon juice- whisk it all up in mixer and viola! You could use other flavours instead of lemon, I just love it. Hope that helps x

Edna De La Cruz has a crusting buttercream recipe and tutorial on her website www.designmeacake.com or ganache is a great choice too
