Hi All….hope this doesn;t seem too strange a questions, but as a newbie it is something I;ve pondered on a couple of times. If someone asks for a cake to feed ex amount of people, obviously you can bake one large single layer, or two smaller tiers & get the same amount of cake (I hope you know what I mean!) but which way do you choose to go….obviously there is more work work involved in the filling & covering of two cakes as opposed to one, but baking one very large single layer comes with its own hazards (assuming you are doing your own baking). How much extra do you charge to do two smaller cakes to tier as opposed to one large layer if the customer hasn’t specifically asked for either, just stated the cake needs to cater for ex amount of people/ I don;t feel I;ve explained myself very well, but if someone can give me a little guidance on this it would be much appreciated :) Thanks.
Since your client did not specify I would do what you think is easier for you. Me, I would choose a tiered cake because I have an easier time covering smaller cakes than a big sheet cake.
Since the way I price I am not sure if the tiered ends up ore expensive or not. I charge for all my ingredients and supplies and add in an hourly rate.
I hope this helps you decide which way to go. Just remember do what you are comfortable with :)
Sooooo sorry for the late reply Prima Cakes Plus…thank you so much for your response, yes I definitely thinks this works better for me too. Mind you I;ve just found out that the cake to feed 60 – 70 people is dessert sizes (not coffee as originally thought)….what way would you go for this?? This is one thing that there seems to be so many variables on..yes of course everyone is going to cut a cake slightly differently..but there is a very diverse range of “Cake Serving Sizes” charts around its quite confusing…I guess you have to choose what you think is the best & stick with it! No need to apologize. There is a site (https://www.bakingit.com/) that makes calculators for both the web and mobile devices. They have an awesome app called Cake Slicer that lets you email a PDF cutting chart of size piece you calculated it will feed. This way if they ever say it did not feed what you quoted you have backup. You can’t control how they actually cut the cake but you can provide to them the chart to show how you expected the cake to be cut. Just a thought.
