Lemon Extract vs. Vodka or Gin

I just finished watching a tutorial from Colette Peters and she highly recommends using lemon extract instead of Vodka or Gin when mixing luster or pearl dust to paint on fondant,

While Vodka has approximately 50% alcohol content, lemon extract has 90% alcohol, which allows the paint to dry almost immediately, thereby avoiding wetting the fondant too much. In addition, lemon extract contains lemon oil, which makes the paint shinier.

Colette recommends that any extract you use should list the alcohol content on the label – it it doesn’t, that means there’s not enough alcohol in it. 80%-90% is the recommended amount.

I use lemon and orange extract… It smells lovely while workings its dries far quicker than vodka too (re your ratio of alcohol) RAEWYN shared that tip when she came to stay with me last week :)
I still use vodka too, it’s great for cleaning up mistakes without damaging your fondant xx

I use both depending on what I’m doing. If it says 100% lemon extract…your ok. In Canada it doesn’t list the alcohol content on extracts.

I’ve used Lemon Extract for painting with food coloring gels and pearl dusts for a little over a year. I try to save a buck where I can. In 8 oz bottle is about $3.00 or $4.00 at Sam’s Club. It is so nice and cheap, I always have some on hand. (I add a small amount to my American Buttercream to cut some of the sweetness)
