All right, I am a well experienced cake baker and decorator. However, ALL my experience is with buttercream. My SIL is getting married in May and wants a fondant cake…but she really wants a buttercream cake with a fondant drape flowing from the top to the bottom. How realistic is doing this cake in buttercream with the drape and flowers made from fondant?

Flowers in fondant will work, provided its not really resting on the buttercream icing but the drapes – i don’t think so. This is because for a 100% fondant cake, there is need to secure/attach the drape to the cake (using sugar glue), however for a buttercream version how will this be possible?

I’ve used a large, heavy fondant plaque on a buttercream cake (on the Archie cake I made last month) and the sugar glue helped, but I did put 3 toothpicks underneath to support it. As for draping, I’m not sure how you’d be able to secure it since they can be quite heavy. Might be worth a test run with fondant or modeling chocolate … try some sugar glue, piping gel or chocolate to attach?

I am totally willing to do a test run, just not sure where to start in order to get results I can work from. I guess I was wondering if I would be able to “pin” the drape into the buttercream at the tope of each drape, and then use the flower to camolflauge the pinned area? Is sugar glue something that you make or is it something I should look for tomorrow when I go to the cake store?
Bakinlove ~ You make sugar glue. Basically put a small piece of gumpaste into water and let it dissolve or you can use CMC powder and water to make the glue.
I speak with no authority on this, but “pinning” and camoflauge would be the way I would go (with a whole lotta finger crossing). Best of luck, I hope it works out for you.

I am going to try it for my daughter’s 2nd birthday with just 2 tiers and see how it goes. I’ll keep you posted but truly any suggestions are VERY welcome :)
