COLOR AND WHIPPING CREAM

WHY WHIP TOPPING START TO DECOLORATE AFTER SOME TIME? PLEASE GIVE AN ANSWER… THANKS

I think it’s because whipped topping, like whipped cream, is a suspension rather than a solution. The components of cream (water and fat) stay together because of the whipping process but will eventually dissolve if left to sit; whipped topping does the same thing. I expect that the colorant you are using attaches to one component and when it begins to separate the discoloration occurs.
