"theater " cake

Hi. I’ve recently seen quite a few “theater style” cakes on CakesDecor. Not quite sure if that is what they are called. Most have what looks like a real cake on top of the “theater”. Could someone either explain how this is done or put me in touch with a tutorial for this technique? Thanks lots.
