I used a recipe for lemon cupcakes I found in the Southern Living magazine &I they keep deflating! I’m wondering if my baking soda/powder was bad or maybe I over beat the mix?? They still taste great but they’re so flat and the edges are crispy.
I know that if the baking soda/powder is expired then it won’t rise, another idea that comes to mind is when making cakes if you slam it in the oven, place it too hard or do anything to overly disrupt it they could deflate in the middle not create a dome or rise as much. I don’t know if that transfers to cupcakes but it’s worth saying
Over mixing can add too much air in the batter and putting that too much air cupcake in a hot oven can cause cupcakes deflation.
