I do some vegan baking, I’d consider myself knowledgeable enough to do a decent cake but by no menas am I an expert!
I do for my self in our home, but I have not done one for anyone else. It is new to use we are still somewhat transitioning.

Gluten free is just substituting some ingredients so there is no wheat. Vegan is no animal products.
I’ve done some vegan cakes in the past few months.
I’ve noticed that my vegan chocolate cakes turn out to be better than the vanilla ones. They are more spongy and moist. Have you noticed anything like that?
I actually haven’t tried baking vegan yet. I plan to try it within the next few weeks :) For some reason it makes sense to me that chocolate would turn out better but that’s probably because it’s my favorite and is more rich so you wouldn’t miss the eggs as much?
I have tried lots some recipes and I usually find it hit or miss with the vegan cakes. Sometimes they don’t seem to rise and are quite dense even with the egg replacer then others are great…. If you find any that are good please share, I am always looking for new ones =)

Question for Shikha – I’ve noticed my chocolate cakes come out with the perfect texture – neither too soft nor dry and they don’t break. But whichever vanilla cake i’ve tried either comes out too soft and breaks or feels pretty dry and “hard”. Do you have a trick for vanilla cakes so they don’t fall apart?
