Hi all! I really need your help! I will be making a coconut cake for someone this weekend but d coconut cake recipe I have makes a small cake. I have to make a 10" square cake that is about 3 or 4" high in one cake pan if possible. Or if any one can help me double or trible this one: 150g Sugar, 100g brown sugar, 1 tbsp baking powder, a pinch of salt, 3 eggs, 1 tsp vanilla essence, 250 ml coconut milk, 350 ml desiccated coconut and 240g of soft butter. Hi, there are couple of things you could do. First, look for a chart online that tells you the amount of batter you need to fill different cake pans, wilton have one. Look at the number of cups you need for the large cake, and the number of cups you get out of your small cake recipe. This will tell you if you need to make 2, 3, 4.5 or whatever number times your recipe for the large cake. Once you have this magic number, Google “recipe scaler” and there are many sites which will do all of the maths for you if you enter the recipe and the multiplication factor (the magic number we found earlier).
