They are relatively new to me, but I have completely fallen in love with making sugarpaste cut-outs. They are fiddly and time consuming, but I find making them really therapeutic, and I think they are brilliant effective on cakes.
I started here with the second tier of this London-themed cake. These very simplistic little guys got me hooked and made me want to try harder:
I didn’t get another opportunity for AGES, but then a client asked for a very specific steam engine to be depicted on a cake for her husband. I didn’t trust my hand painting skills to do it justice, particularly given the perspective, so revisited the cut out method again:
And I echoed the technique with the cricketers on the tier above, which I enjoyed so much I made a little tutorial:
But my biggest challenge came just two weeks ago when I was faced with making a Star Wars cake and an Avengers cake in the same week. Both clients wanted lots of characters on their cake and there was no way I was going to have time to sculpt them all, so the cut-outs were the obvious choice again. They took FOREVER. 16 characters in total.
But I had so much fun I made another little tutorial :)

Your pieces are so crisp. Can I ask… I can’t see any knife drag marks or stretching, are you using plain fondant?

Hello, yes, plain fondant most of the time. I sometimes add some cmc powder if I need it to dry quickly, but I think the secret is a super sharp knife. Then I use a plastic blade and colour shapers to add the detailing. I’m not an expert though! Mostly making it up as I go along… ;)
