This is my gingerbread recipe. Ive used the same one for years and its never failed me. Its great for gingerbread houses too! :-) This quantity will make about 30-40 cookies or a large house.
Ingredients :-
375g plain flour
1tsp baking powder
100g cold butter
175g light brown sugar
1 egg
4 tbsp golden syrup
3-4 tsp ground ginger
1. Preheat the oven to 180c/gas4. Grease and line a baking sheet with greaseproof paper.
2. In a large bowl sift the flour and baking powder together, rub the cold butter into the flour until it resembles breadcrumbs. Then stir in the brown sugar and ground ginger.
3. Next, make a well in the centre of the dry ingredients and add in the egg and syrup.
4. Gently start to combine the wet ingredients into the dry with a spoon and when a dough starts to form you can use your hands to knead the dough together.
5. Let the dough rest in the fridge for a least 30 mins. At this stage you can prepare the dough in advance and ive found you can have it in the fridge for up to a week until youre ready to bake it.
6. Roll out your dough to about 7mm thick and cut with your desired cookie cutter. Place on your greased sheet and bake for 15-20 mins until golden brown.
7. Decorate and enjoy! :-)
