I’ve just returned from delivering and setting up this cake at a luxury Trailer Park in Elgin in the Western Cape, South Africa. A lot of South Africa’s fruit is grown here and in spring time it is breathtakingly beautiful! Blossoms as far as the eye can see – what a stunning part of the world! Sadly about 6 weeks ago there was a devastating fire in this area and and destroyed many beautiful orchards and vineyards as well as farms. There was a wedding at Old Mac Daddy’s Trailer Park that had to be evacuated (imagine this? How awful for the bridal couple). By some sheer miracle and the efforts of the fire fighting teams Old Mac Daddy’s was saved, but I was shocked to see just how close it came to burning the whole park down – they sure were lucky!

Anyway, the wedding cake I delivered today was not one of my usual ones, as the top tier was totally vegan – have any of you made a vegan vanilla cake yet? I am sure lots of you have! Will you do it again in a rush? Don’t think I will as it was a very unstable little cake! Thankfully it was just the top tier that was vegan – the rest was my normal sponge recipe. I had it in the fridge overnight, and as soon as I got to the venue, I popped this little cake into the fridge whilst I unpacked the car and set the rest of the cake up. Thankfully it all seemed fine when I left and there was a nice cool breeze blowing over the cake so it should be fine.

And in case you are wondering whether there were any photo opportunities left for the bride and groom, yes! The venue is right smack bang in the middle of an apple orchard and the trees were laden with fruit. The other side of the venue – not so much but if the bride is brave enough, I think her beautiful dress would look very dramatic against the burnt earth.
