II have to tell you a little story behind this cake. Last year I made our family’s Christmas Cake and at the last minute I sold it – to a good friend, mind you! – but my son was not at all impressed as we ended up with a rather plainly iced Christmas cake. The one I sold was of a Santa disappearing down a chimney and was my first big Christmas cake since I started cake decorating earlier last year. Anyway, this year I decided I had to make a special cake for us, especially my son, who loves fruit cake. I had no idea what I was going to do but the cake kind of developed as I was busy with it. I looked around the room and spotted a glass domed rose bowl and from then on, the cake just grew! I did some quick research on “snow globe cakes” and found a stunning example from “Cheeky Munch Cakes” and sort of followed some her ideas but added quite a few of my own too. Needless to say, my son and family were very happy with “our” cake this year – and I was made to promise it wasn’t going to be sold. I eventually picked up the courage today to cut it – something I never thought I’d find difficult to do, but trust me, this time it was!
