This dairy-free vanilla bean cake was made for a gentleman who loves nothing more than walking in the mountains with his family. To reflect his dual nationality I gave the children NZ and UK flags to wave, and there was a nod to his aspiration to learn to play Star Wars on the piano as I tucked the score into his backpack. 100% edible – even the rocks :)
