Oh how much FUN I had with this one! The 10-year-old birthday girl knew EXACTLY what she wanted & designed the cake herself. She wanted a rainbow bottom tier decorated with a candy theme, a slice of cake middle tier, & an upside down ice cream cone melting over the whole thing. I just had a blast bringing her vision to life in sugar! And the matching snow cone cupcakes are too cute!

The ice cream cone is actually a huge chocolate cake pop coated in melted white chocolate. The top tier is chocolate cake with vanilla buttercream filling & dark chocolate ganache. The bottom tier is a ‘Surprise Inside’ 6-layer rainbow cake, done in vanilla almond cake with white chocolate buttercream filling & white chocolate ganache.

All decor is fondant & edible except for the real lollipop sticks in the lollies. My favorite thing is the bottom border encrusted with sprinkles! I LOVE sprinkles! :-)
