I have been longing to make this cake from the wonderful Carlos Lischetti Animation in Sugar book – my birthday presented the perfected opportunity! I found the fairy very tricky. I’d never used mexican modelling paste before and found I needed to strengthen it a lot with flower paste in order to hold the shapes. I think next time I’d just use flower paste! However, I’m really really happy with the way it’s come out and it tasted fantastic (chocolate and pistachio cake!).
