When your child sees make so many cakes, its’ only obvious she has a proper wish list for her own birthday cake.

This year, my daughter insisted that her cake must have Hello Kitty, Boo of Monsters Inc. and Agnes of Despicable Me. Now anyone who knows me, knows that I run as far FAR away as I possibly can from figurines and therefore there was absolutely no chance I would let Zoya bully me into it. The inspiration behind this cake is Royal Bakery’s Monsters Inc. cake. Lesley is my cake hero and her design concept was a God send to my delimma.

I skeched the design out in about 10 minutes, was beyond pleased that Zoya figured it out and decided to go ahead with it. But what with a full time job and an OCD with ganaching, I ended up decorating the cake right at the very last minute. Going 6 hours straight and into the wee hours of the night, this cake did not seem as simple to make as I thought it would!! But definitely one that I am really proud of.
