First ever Unicorn cake I made and it has wings too! Thanks to the wonderful tutorial by Veronica Arthur from “With Love and Confection” I managed to get it right. The wings are made from meringues and thankfully I made a few extra as I accidentally chipped the first set and the second set had the sticks at the wrong angle. Next time I will know better but I was really pleased with this one and so was my client. She kindly sent me a photo of the cake when it was cut – there were 6 layers of pastel rainbow sponge inside. So can’t wait for the next order – there is definitely something magical about Unicorns!
