This must be the most special cake I’ve made to date . My daughters engagement cake . It’s a three tiered sponge cake with all different flavours the bottom tier is a chocolate sponge with dark chocolate ganache filled with salted caramel sauce and a caramel fudge . The second tier an almond sponge with white chocolate ganache and filled with morello cherries . The top tier is prosecco flavour sponge with white chocolate ganache and honey comb crunch .

The bamboo effect I achieved with a mould …. I only had three days to plan and make the cake ! And I love making orchid sugar flowers .
