Hi Everyone, This is my son’s birthday cake – he really wanted a Harry Potter cake but we wanted to try a different take on the theme so he asked me if I could make him Fawkes the Phoenix. It wasn’t without it’s challenges (!) – mainly getting the structure right.

The cake is layered marble cake and ganache, his face is modelled from a mixture of fondant and chocolate, and his tail feathers and Hogwarts acceptance letter are from wafer paper.

He was airbrushed using Magic Colours airbrush colours.
