9 months ago I conceived the idea for Avant-Garde Cake. I approached American Cake Decorating magazine with the idea for the collaboration and the editor offered to feature ALL of our work in a special edition collaboration led issue. 35 artists created cakes for the special edition issue, the biggest exclusive showcase ACD has ever created. We also worked with the magazine to provide the content for ALL their regular columns, Kara Andretta wrote an amazing article on avant-garde flavors, I wrote an article on modern cake design and Albena Petrova provided an in depth interview for “in my kitchen”. Other artists also kindly donated tutorials, such as shannon bond and Jeanne Winslow. My piece is called “spiral fantasy”- I wanted to play with structure and perspective and push myself to create something I’d probably never conceive of in real life. It was my hubby who helped me along with this design. The cake is centered around a single dowel and all the cakes are slightly offset to give a spiral appearance. The cake was inspired by spiral staircases and modern architecture. I used the dahlia flower as an accent because it’s design has a natural spiral like appearance. I accentuated this feature to create an insane fantasy flower. There’s a tutorial for the flower in American Cake Decorating Magazine, along with a 4 page article on modern cake design.
