Oh golly gosh! I had a bit of a moment this week – I hadn’t been very well and had lost my voice so off to the docs I went only to be given a jab of cortisone which made my head feel like it was up in space half the time and when I was putting Chloe’s cake together, instead of halving my layers (which I do for my rainbow cakes), I only levelled them. I starting to ganache the layers together and as you all know, chocolate sets pretty quickly, and by the time I had got to the 4th layer I realised that this was going to be one heck of a tall cake!! Actually my tallest one yet – 22cm high! Thankfully it covered fine and the many rainbow hearts on it made it look pretty, but poor Chloe’s mom is going to need a very big knife and a very steady hand to cut this monster of a rainbow cake! Chloe was delighted with her cake and her rainbow marshmallow pops!
