An entirely vegan cake, lemon top, chocolate orange bottom, and dummy tier in the middle. What a challenge! One, I’ve never been to a festival, fortunately this couple love Glastonbury and have lots of photos I could browse for inspiration, and good old Google. I made their names like the patchwork sign at Glastonbury and the dummy tier was the ribbon tower. Second, I’ve not done vegan cakes before, so got lots of practice in and made endless variations until they tasted like you couldn’t tell the difference. My work mates were excellent judges. Also, the decorations couldn’t be made from flower paste or modelling choc, so I used gum trag with normal fondant to get a good set. Even the glue had to be rethought, I used gum Arabic.
