I made this cake for a wedding a couple of weeks ago. The bride showed me some pictures of beautiful ruffled cakes by The Pastry Studio and asked for something similar and this is what I produced. Bottom tier was a traditional marzipan covered rich fruit cake, centre tiers were vanilla sponge with buttercream and strawberry preserve and the top tier was chocolate sponge with chocolate buttercream. The ruffles took me less time than expected once I got in ‘the zone’ ;) and overall it was a thoroughly enjoyable cake to make.
The bride very kindly sent me a wonderful message a couple of days later to tell me the cake was the talk of the wedding and everyone loved it :).
This would have been a perfect experience from start to finish had the venue not managed to break my cake stand after the event!! (now sorted out by a full reimbursement). A reminder to all who hire out stands to take a good deposit, and ensure you get your paperwork properly signed off by those who are taking responsibility for your items!!!
