Gardens of the World is a “Chelsea Flower Show” Inspired International cake collaboration featuring 26 outstanding, award winning and celebrated cake artists from all over the world. Our common theme was “Gardens of the World” We have created sugar art celebrating the beauty of English, French, Italian, Japanese and Spanish Gardens.

I was so honoured to be invited to participate in the Gardens of the World Collaboration and am so happy to finally be able to share the cake that I did for this collaboration with you all.

My theme was Italian Garden. When designing this cake I tried to interpret my vision of an Italian garden: an outdoor space filled with lovely loggias decorated with arcades and stone balustrades, an impressive fountain in the middle, citrus trees and flowers, and ornamented with bushes trimmed into cones and spheres, against a backdrop of an amazing blue sky.

All decorations were made out of fondant apart from the Fountain for which I used a mixture of fondant and Mexican paste and most of the decorations were made freehand. I only used cutters for the fountain bowls and for the small flowers and leaves.
