I was thrilled to be asked to join this Christmas collaboration a couple of months ago together with a group of lovely ladies. The famous Christmas song was the inspiration behind the theme and each of us had a specific day to create in sugar form and of course bring in some elements of Christmas too.

I chose Two Turtle Doves and this was my first three tier square cake and first square double barrelled cake for the middle tier. Square cakes scare me just a bit! The top tier was covered with hundreds of tiny sequins hand cut and placed individually – a long process! I wanted to use cool icy tones that represented winter and bring a pop of colour with the red berries and poinsettia style flower.
